We are TRUFFLE ARTISANS, a small team who loves truffles, organic products, natural flavors and handcrafts. Our customers are chefs and lovers of good food who know where we harvest and select our truffles and how we elaborate our products. They know how to combine ingredients and textures of different truffled products resulting in flavorful and healthy dishes.

HOW DO WE HANDLE TRUFFLES?

We select fresh truffle directly in the field and we prepare it in a way that can reach a chef in a maximum of 3 days. We manufacture our truffled products in the workshops of our chosen artisans. All products are hand-made, in small lots. They contain truffle and are made with natural vegetable infusions. We seek bacterial proliferation and fermentation as natural aromatic pathways. Since they are artisanal goods, our stocks are small, thus we work on demand with few and distinguished distributors.

R&D&I

RESEARCH, DEVELOPMENT AND INNOVATION

Our founder, José Manuel Pardo, has a technical background as a veterinarian and food technician. In his youth, he conducted research in France and Switzerland.
Possibly the most artisanal and innovative truffle company in Spain, because it works with scientists but finishes the development process with top chefs.
G&Ch’s research and development goal is to add value to truffle populations, either by improving the production methods of local artisans or by selecting and using good truffle discards, such as the Truffo project.
We were awarded ‘Top Innovation’ at the ANUGA trade fair in Germany for our Black Truffle Bubbles (truffle caviar), we were part of the jury for the best truffle awards at the Vera del Moncayo Fair, and we have organised truffle tapas competitions in the US.

TRUFFO

Truffo is a sustainable, value-added project, social backbone which promotes the circular economy, targeting new and larger market segments.

It’s a winter truffle rebuilded with truffle pieces and sealed with 24k gold.
Inspired by the Japanese tradition of Kintsugi, it is hand-rolled and macerated and matured for weeks at a controlled temperature.
